I’m resurrecting some oldies, but goodies today.
I’ve had a bunch of recipes stuffed in my back pocket and I’m finally getting around to introducing them to the world they were made for.
BUT FIRST!

What is wrong with me?
Any excuse to work, which sometimes actually means, ahum, shop for beautiful things like this new surface that I’m waiting to arrive.
Just recently I started testing out my Big Berkey water filter. #ad
This thing is boss!
It filters out bacteria to a 99.99999%and viruses to a 99.9999% level.

I have been digging the ginger flavor (low in sugar).

Okay, so I should probably brief you on this ice-cream as well, huh? It’s pretty straight forward. Here are my favorite things about this recipe:
It’s a no churn recipe! No ice-cream machine required. No freezing required! Amazing, right?
It only takes three simple and healthy ingredients. Plus, it’s made with protein powder, so it’s even more healthy!
It’s whipped up in the blender in only three minutes!!! Literally, that’s all the time it takes!
Also, NO BANANAS!
It’s a creamy soft serve (that serves well for lunch 😉 ).
And of course, that pretty pink color is jiving pretty good with me right about now.

- 4 cups frozen strawberries
- 1 can full fat coconut milk
- 2 scoops Bob's Red Mill protein powder

Ingredients

- Blend all ingredients together in a high powered blender for 3-4 minutes or until completely smooth. You will probably have to use a tamper to mix while blending.

Hi, which specific protein powder is it? Amazon has soy, whey, hemp, etc
I have used the one from Bob’s Red Mill- any of those will work or Collagen. 🙂

You can store them in a plastic or glass container in the freezer. 🙂 It will have to thaw out before eating it again.
Hi, what do you mean by “use a tamper to mix”?
Hi Promise, a tamper is what goes into the top of a vitamix to aid with mixing.
I have a coconut allergy but this sounds so good! Any other alternatives for milk? I don’t like to use lots of soy because it’s bad for my hormone balance…would almond not taste good because it’s low sugar? 🙁 Got any ideas?
Hi Bailey- I used canned coconut milk because it is thick and creamy!! I think almond milk would work- it would just be not as rich and creamy like ice-cream.
Most protein powders are ‘grainy’ or ‘sandy’ tasting. Is it best to mix the coconut milk with the protein powder first and let it sit a few minutes before adding the strawberries to let the protein powder soften ?
Hi Kathy, if you have a high powered blender it will turn out smooth- if not, then soaking the protein powder sounds like a great idea!
